Changing opening times to be more for delivery means customers can place order for collection anytime while restaurant is closed, that doesn't sound nice but maybe as an extension.. Hmmm?

Have so customers can collect during the day (10am to closing) and deliveries only to start at 18:00 to closing

Hope this makes sense. It would allow customers to order for collection through the day when we don't have delivery drivers. Failing that opening times can just be changed to its more for delivery.

HI Sam, my restaurant has 2 shift, from 11:00am to 4:30pm is for collection and from 4:30pm to 10:00pm is available for collection and delivery. How would the set up be?
