i am trying to use this template but it does not work, can anyone guide me why its not:

New {order_type} Number {$order_number} for {order_date} at {order_time} Total: {$order_totals}

the message will received like:
New Delivery Number {$order_number} for 01 Jan 2022 at 14:38 Total: {$order_totals}

You have a dollar sign in front of some of the variables - you shouldn’t. I also think it should be order_total not order_totals

yes correct for {order_number}

but for order total i tried the below and none worked:
{$order_totals}
{order_totals}
{{ $order_total[‘order_total_value’] }}

Is there not a list of variables beside the template editor?

{order_total} did not work, the variables looks like

You would need to check with the extension developer then to see what is available.
